Grillo is an evocative wine, a wine that contains all the Sicilian way of the sea, summer breezes, citrus fruits. Grillo grapes are harvested by hand, cold macerated for 10-12 hours and softly pressed; the juice obtained ferments in steel vats at a controlled temperature of 14-16°C. Then left to age on the noble lees in steel vats for 4 months and a further two months after bottling
